I agree, and came here to ask for this feature.
There are a number of new models of electric moped being released, and their prevalence is only going to increase over time. Such vehicles are restricted in speed, often to around 50km/h, and cannot enter certain roads. There are zero navigation apps that can currently help these vehicles: the options of vehicle type are either car/motorbike (which are essentially the same thing), or bicycle (routes where mopeds aren't allowed). It seems all navigation apps, including Waze, have no features that help improve safety or routing to avoid restricted roads for these vehicles.
I live in The Netherlands where the road signs are small and badly situated most of the time. I rely on tools like Waze to help navigate safely around the cities, but it is still too easy to find oneself on a restricted road.
I understand it could be a lot of work to add this feature, but being able to select "moped" with a top speed would be a game changer, especially if Waze partnered with companies like Niu who manufacture these mopeds. I could be a great revenue stream too: I'd happily pay for this feature, especially since no other satnav app has it, and electric mopeds will increase in number in larger/capital cities like Amsterdam, Paris, etc. where car travel is being actively reduced.
